When you choose to follow someone on Steemit, you'll see in your Feed the posts that they've published recently.

You can see the list of followers or people you are following by clicking on the links on your profile page.[1]

Following/unfollowing users is a steem blockchain operation. This means that posts from users that were published while you were following them will still be shown in your Feed even if you unfollowed this user in the meantime.
